How To Make Gooseberry Jelly With The Microwave


Gooseberries contains resveratrol which has many health benefits.

Gooseberry Jelly Recipe
900g gooseberries
575ml water
450g sugar
Wash goose berries and place in a large bowl with the water.
Cover and microwave at 100% high for 15-29 minutes, mashing well with a wooden spoon twice to extract as much pectin as possible, until fruit is very soft.
Strain through the jelly bag
Tip the fruit and liquid into the jelly bag set above a bowl.
Leave undisturbed to drain for 4-6 hours.
Do not press fruit to speed draining or the jelly will be cloudy.
Warm the sugar and juice separately. Stir the sugar into the juice and microwave at 100%. High for 20-25 minutes until setting point is reached.

Pot, seal and label.
