Raisins
Grapes were sundried into raisins as early as 1490 B.C.
Raisins were accidently made when grapes could not be harvested and the sun
dried them on the vines. Grapes lost
their moisture but also became sweeter and could be stored for longer.
The grapes are placed on trays to dry in the sun or indoors
with heat. It takes two to three weeks to dry grapes.
Raisins should be stored in a cool, dry place. Heat and air
can cause them to dry out. After opening a package of raisins, place in an
airtight container and refrigerate for long term storage.
Chocolate With Rum Raisins
Makes 4
dozen
Ingredients
3 cups
seedless raisins
1 cup rum
12 ounces
semisweet chocolate pieces
1 tablespoon
light corn syrup

Place
raisins in a large plastic food bag.

Add
rum, secure bag.
3.
Let
raisins soak for 3 hours.
4.
Drain
raisins by placing in a sieve, do not press.
5.
Use
liquid in fruit compote or spoon over ice cream.
6.
Combine
chocolate pieces and corn syrup in top of double boiler.
7.
Place on hot, not boiling water until chocolate melts, stir occasionally

Remove
from heat.
9.
Fold
raisins into melted chocolate, coating well. Drop heaped teaspoonfuls onto
wax paper.
10. Chill until firm, store in refrigerator.
