Cranberry Snow with Mint
Serves 4

Ingredients
60g fresh of frozen cranberries
30g tbsps grandulated sugar
2 egg whites
60g sugar
140ml whipping cream
140ml natural yogurt
30ml chopped fresh mint

Instructions
Combine the cranberries and 30g of sugar in a small, heavy based pan.
Cook slowly until juice forms and the cranberries soften.
Set aside to cool completely.
When the cranberries are cool, whisk the egg whites until stiff but not dry.
Gradually whisk in the 60g sugar.
Whisk well in between each addition of sugar until stiff peaks form and the egg whites are smooth and glossy. Whip the cream until thick, and combine with the yogurt.
Fold the egg whites into the cream and yogurt mixture along with the cooked cranberries and the chopped mint. Do not over-fold, the mixture should look marbled.
Spoon into individual serving dishes and garnish with the whole sprigs of mint.
