Strawberry
Dessert
Strawberries contain resveratrol, which research has shown to
contain many health benefits. Include them into your diet whenever you can.
Ingredients
250g hulled strawberries
2 tablespoons icing sugar
1 cup cream
Instructions
Mash the strawberries with the icing sugar until soft and
pulpy. Whip the cream until soft peaks form. Stir the cream into the fruit
mixture. Taste and add a little extra fruit if desired. Place into glasses and
chill. Serve with wafers.
You may use any fruit for this dessert, however using half
strawberries and raspberries gives you the health benefits of resveratrol.
Strawberry
or Raspberry Jam
Ingredients
1,5kg of either strawberries or raspberries (hulled)
1,25 kg sugar
1/3 cup lemon juice
Instructions
Preheat the oven to 140C or 275F
Place the sugar in an ovenproof dish and warm for ten
minutes. Place clean jam jars in the oven to warm also. Put a saucer into the
freezer to chill.
Place the strawberries, lemon juice, warm sugar and a half
cup of water into a large saucepan. Stir over low heat until the sugar had
dissolved. Increase the heat and simmer gently for twenty minutes, stirring
frequently, and skim off any scum that rises to the surface.
Remove from the heat. Drop one teaspoon of jam on the chilled
saucer and return to the freezer for a minute. If the jam forms a skin and
wrinkles when pushed with a fingertip, it has reached setting point. Remove
from the heat and let stand for fifteen minutes before bottling.
Spoon the jam into the warmed jars and allow to cool. Seal,
label and date the jars and store in a cool place.
